Vanilla Bean Scones

🍰🍓Our favorite wintertime afternoon delight. 
Treat yourself to our light vanilla bean scones, perfectly paired with Coco Fine Foods Raspberry Vanilla Jam and a generous dollop of whipped cream. ☁️ 

Vanilla Bean Scones

300g / 2½ cups all-purpose flour
2 tsp baking powder
½ tsp sea salt
40g / 1/3 cup raw cane sugar 
150g /3/4 cup butter, chilled and cubed
118ml / 1/2 cup cold heavy whipping cream plus 1T
1/2 tsp Madagascar vanilla bean paste.

METHOD:
1. Pre-heat the oven to 400F and line baking sheet with parchment paper. 
2. Place flour, baking powder, salt and sugar in food processor. Blend to combine.
3. Add cold butter and pulse until it resembles course meal.
4. With the processor on low, add 1/2 cup cold heavy whipping cream and vanilla bean paste until dough just comes together.
5. Turn onto floured surface and roll to 1/2 inch thickness. Cut into six triangles or use a floured rim glass to create rounds.
6. Transfer to baking sheet, brush with 1T heavy cream and sprinkle with sugar; 
7.  Bake for 12-15 minutes or until scones are just golden.
8. Remove from oven and cool on wire rack.
