Smokey Pumpkin Pot de Crème 

Here is Fall season variation of the pot de crème tailored to highlight the rich depth and subtle warmth of Coco Fine Foods Smokey Pumpkin Spice Blend. The smoky notes elevate the autumn profile, adding an artisanal complexity that balances the natural sweetness of the pumpkin.

Ingredients

 Heavy Cream: 1 1/2 cups

 Whole Milk: 1/2 cup

 Pure Pumpkin Puree: 1/2 cup

 Egg Yolks: 5 large (room temperature)

 Dark Brown Sugar: 1/3 cup (packed)

 Vanilla Bean Paste or Vanilla Extract: 1 tsp

  • Coco Fine Foods Smokey Pumpkin Spice Blend: 1 1/2 tsp (adjust up to 2 tsp if you prefer a more robust spice profile)

 Kosher Salt: 1/4 tsp

Instructions

1. Preheat and Prep: Preheat your oven to 325°F (160°C). Place six small ramekins inside a deep roasting pan, and bring a kettle of water to a boil.

2. In a medium saucepan, combine the heavy cream, whole milk, pumpkin puree, half of the brown sugar, and the Coco Fine Foods Smokey Pumpkin Spice Blend. Warm over medium heat just until steaming (do not boil). Remove from heat, cover, and let steep for 15 minutes to allow the smoky spices to fully infuse into the dairy.

3. Temper the Eggs: In a large bowl, whisk the egg yolks and remaining brown sugar until slightly thickened and pale. While whisking constantly, slowly drizzle in about half of the warm spiced cream mixture to temper the eggs.

4. Combine and Season: Pour the warmed egg mixture back into the saucepan with the remaining cream, whisking continuously. Stir in the vanilla bean paste and kosher salt.

5. Strain and Pour: For an impeccably smooth, silk-textured custard, strain the mixture through a fine-mesh sieve into a pitcher. Divide evenly among your ramekins.

6. Bake in a Water Bath: Place the roasting pan in the oven and carefully pour in boiling water until it reaches halfway up the sides of the ramekins. Cover the pan tightly with foil and bake for 30 to 35 minutes, until the edges are set but the centers still possess a delicate jiggle.

7. Chill and Serve: Remove the ramekins from the water bath, let them cool to room temperature, cover, and refrigerate for at least 4 hours (or overnight) before serving.

8. Garnish with lightly sweetened whipped cream and a dusting of Smokey Pumpkin Spice Blend.
