Love Jam Skillet Brownie

Love Jam Skillet Brownie

  • 8oz butter, melted
  • 16oz raw cane sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 12oz bittersweet cocoa powder, preferably Valrhona
  • 16oz all-purpose flour
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 8oz chocolate chips 66% or higher
  • 4oz Coco Fine Foods Love Jam or Raspberry Vanilla Jam

 

Grease 8in cast iron skillet.

Melt butter in microwave and put aside.

Whisk together eggs, vanilla extract and cocoa powder in separate bowl until all incorporated.

Add butter and mix until no streaks remain.

Next, add sifted flour, baking powder and salt. Mix well until fully incorporated.

Lastly, add chocolate chips and mix in well.

Pour batter into prepared cast iron skillet. 

Place 3 separate teaspoons of jam around top of batter and gently swirl with fork.

 

Bake at 350F for 25 minutes or until skewer test comes out clean and baked brownie pulls gently from side.

Serve warm with favorite ice cream or whipped cream. 

 

Serves 2 generous or 4 small portions
