Grains of Paradise

Grains of Paradise

We are often asked about one of our lesser known spices, Grains of Paradise, and how it might be used.
Grains of Paradise has an aromatic, complex flavor profile with a combination of warm, spicy, and peppery notes.
At once peppery, citrusy, floral and earthy with warm, woody notes.

Grains of Paradise can be a wonderful addition to holiday dishes, adding a unique and flavorful twist to traditional recipes. Here are a few ideas on how to use grains of paradise in your Thanksgiving cooking:

1. Season the turkey: Grind or crush grains of paradise and mix them with salt, pepper, and other spices to create a dry rub for your Thanksgiving turkey. The warm and peppery flavor will enhance the taste of the meat.

2. Spice up stuffing: Add ground grains of paradise to your stuffing mixture for a delicious and aromatic twist. It pairs well with other traditional stuffing ingredients like onions, celery, and herbs.

3. Season roasted vegetables: Toss your roasted vegetables with a sprinkle of ground grains of paradise, along with olive oil, salt, and pepper. The spice will elevate the flavors of the vegetables and add a warm and slightly peppery kick.

4. Infuse in gravy: Crush a few grains of paradise and add them to your homemade gravy while it simmers. The spice will infuse into the gravy, giving it a unique and flavorful twist.

5. Incorporate in desserts: Grains of paradise can also be used in desserts like pies, cakes, or cookies. Add a small amount of ground grains of paradise to your pumpkin pie filling or gingerbread batter for an unexpected and delicious flavor.

Over the past few years, I sought out a gastronomic interpretation that never quite formed but I think that’s as it should be as the Victoria Sponge really is the little black dress of cakes.
