Florida Strawberry Jewel Jam

Florida Strawberry Jewel Jam

On a beautiful day yesterday with dramatic skies, Coco Fine Foods headed a bit further inland to handpick gorgeous sustainable Florida strawberries for our Strawberry Jewel Jam.
A few interesting facts about this lesser known of sunny Florida fruits.
* Florida’s strawberry season typically begins in December and runs through April.
* As the third-largest strawberry producer in the United States, Florida boasts an impressive array of strawberry farms and festivals that celebrate this beloved fruit.
* A strawberry plant can be picked multiple times throughout its growing season and produce fruit continuously for weeks or even months.
* The plant’s flower is a delicate white and yellow with hundreds of stigmas on each flower. Each stigma must receive pollen in order to develop a large, well-formed berry and some farmers bring bee colonies in to help pollinate
* One of the reasons why Florida strawberries are so highly regarded is the state’s ideal growing conditions. The combination of fertile soil, warm days and cool nights creates the perfect balance for the strawberries to ripen slowly, ensuring an exceptional taste and sweetness.

Victoria Sponge Obsessed
Victoria Sponge Obsessed

I’m obsessed with Victoria Sponge Cakes; one of the strongest held memories of my native land as I tried to adapt to a new culture as a young child.
I’d pull out my mother’s Marguerite Patten cookbook and ask her to make that cake I was pointing to; airy, jammy and fruit laden with pillows of Chantilly cream.
Over the past few years, I sought out a gastronomic interpretation that never quite formed but I think that’s as it should be as the Victoria Sponge really is the little black dress of cakes.
